This deliciously fizzy, probiotic-rich beverage, is a healthy alternative to soda or seltzer and very easy to brew at home!

Water kefir—also known as Aqua de Kefir, Aqua Kefir, Kefir Soda, or Kefir Pop—is a lightly fizzy, probiotic beverage similar to kombucha, traditionally made by fermenting sugar water with water kefir grains (also called tibicos). Often described as a “living, healthy soda,” it delivers natural effervescence and beneficial bacteria without the heaviness of sugary soft drinks.
While it may sound a little mad scientist, aqua de kefir has been enjoyed for centuries. Historical records trace its roots back to Mexico and Central America, where tibicos were naturally cultivated on the pads of the prickly pear cactus and used in fermented drinks as early as the 1800s. Across cultures, these sparkling ferments were valued not only for their refreshing taste, but also for their digestive and immune-supporting benefits.
Flavor-wise, water kefir sits perfectly between seltzer and kombucha—more full-bodied and complex than plain sparkling water, yet lighter and less vinegary than kombucha. The result is a crisp, refreshing, probiotic beverage that feels both ancient and modern at the same time. I started brewing it in 2010, and couldn't believe it was naturally fizzy, and amazing for you.
A quick Google search will turn up many health claims for water kefir, curing everything from acne to cancer. Touted as the next Kombucha, kefir has been showing up on retail shelves across the country, and it also very easy to make at home using a basic kefir kit, some swing tops, and whatever flavors you like.
Why do People Drink Kefir?
Kefir is filled with B-vitamins and works by balancing the microflora in your body. It's also been known to help people with yeast infections, indigestion, obesity, Irritable Bowel Syndrome, Crohn’s Disease, skin disorders---the list it goes on and on.
