AquaKefir – Superior Quality 

Once again, I would like to point out that Aquakefir is a water-kefir. The original kefir, as drunk for centuries in the Caucasus, was a goat’s milk kefir. Although people from all over the world have reported the beneficial effects of water-kefir for decades now, it would not be fair to put the two drinks in the same box.

The indispensable ingredient in the preparation of genuine kefir is the white, pearl-like kefir grains. In order to enable industrial mass production of kefir, a kefir starter has been developed to replace these grains. It goes without saying that a similar surrogate does not lead to the real thing. Aquakefir is therefore prepared with the original kefir grains.

Water-kefir can also be prepared in various manners. Aquakefir is prepared with extremely pure water (conductivity is 10 µS/cm at the most). Since water-kefir should mainly have a dissolving and rinsing effect, the amount of dissolved substances should be reduced to a minimum, and this process begins with pure water.

In addition to water, the recipe for Aquakefir contains nothing but lemons and dried figs. Most producers chose to substitute the figs in the recipe, however, it has been established that figs contain a unique growth factor which has a stimulating effect on certain kefir organisms. We value the preservation of this ingredient. Aquakefir is probably the only water-kefir in the world which is prepared without the slightest trace of sugar.

Finally, water-kefir should be a living drink. Half of its effect is located in the regeneration of the intestinal flora. Make sure that you never use pasteurised kefir. Aquakefir has not be treated and is bottled 100% alive.

Water-kefir – is it all the same quality? – Not all water-kefir is water-kefir 

Those who wish to harness the benefits of water-kefir must seek it out with caution as several brands of low quality circulate the market. As far as I know, our Aquakefir is the sole organic (demeter), authentic water-kefir available. Pay special attention to pasteurisation, additives, sweet drinks (lactic acid is sour, not sweet!) and deviating ingredients. Something you cannot check that easily is the ferment used. However, those who know genuine water-kefir, will soon taste the difference.

Upon home preparation, pay special attention to exaggerated amounts of sugar and insufficient fermentation. The first error can cause high alcohol formation and high sugar residue, the second can lead to dangerous infections and even poisoning.

The importance of an organic certificate and Demeter 

More information on the importance of an organic certificate can be found under our item kombucha, Original Green. Our kefir has been placed under the Demeter label. This label stands for organic ingredients, we also follow certain processes in production to insure extra vitality in our products.

During the production of Demeter ingredients, a number of vitalising preparations are used and growth is consciously conducted in harmony with cosmic rhythms of nature. This process insures quality and cannot be substituted by the use of chemical substances. Much more important is the life force or ether force which our food adds to our body. Nothing is known about this aspect in regular science. It is therefore quite hazardous for the human race to embrace an agricultural system based merely on scientific evidence and completely ignoring the intuitive knowledge of the agricultural worker. Almost all ancient common sense has vanished from this industry and calculations have taken its place which if continually relied upon will act to harm the human race.

The organic-dynamic growing method acts as an effective substitute to this ancient intuitive knowledge by renewed insight into life processes, but continues to be dismissed by modern day scientific thinking.

We cannot market our Aquakefir under the Max Havelaar label, because the organic-dynamic ingredients (dried figs and lemons) are not available with a Max Havelaar label. The figs come from Turkey, through Rapunzel (Germany). Rapunzel follows a personal guideline with similar norms as Max Havelaar’s and this is indicated with a Hand-in-Hand fairtrade label. The lemons come from Italy, where fairtrade is believed to be self-evident.
